Congeners are characterized as chemical compounds which are produced together with ethanol in the fermentation process. They are frequently referred to as "impurities". Common congeners are methanol, acetaldehyde, esters, such as ethyl acetate, and fusel oils. Fermentation conditions may be adjusted to control congener formation, depending on the requirements for the end product.
